Please know that I do not stick to a 100% fibro diet. I’m a mom to five kids and life just happens. If you cannot stick to a good fibro meal, it’s okay – just try again with the next meal. These recipes are rated from one to five stars along with a link to the recipe, if I found it online. Any comments or modifications to the recipe are also left for each recipe.

Loaded Chicken and Potatoes Casserole

Rating: 3 out of 5 stars

Make it fibro-friendly: Substitute the potatoes with sweet potatoes.

Comments: This was an okay meal. My kids didn’t like it as much as we did, so there was a lot leftover.

Sausage with rice and kimchi

Rating: 4 out of 5 stars

Comments: Sausage is either a yes or no for me, so I can only have it once every other month or so. Kimchi is extremely good for the digestion tract since it is loaded with good bacteria that makes it easy for your stomach to digest.

Make it fibro-friendly: Use brown rice, but I’m not sure how well that will taste with kimchi.

Best Ever American Goulash

Rating: 4 out of 5 stars

Comments: This is an easy dish because it’s just one pan to dirty and clean, and reminds me of my grandmother’s Southern cooking.

Make it fibro-friendly: Substitute the noodles with whole wheat noodles.

Rating: 4 out of 5 stars

Comments: This is an easy dish and simple to make, but tasty!

Make it fibro-friendly: Use whole wheat tortillas and go easy on the cheese.

Baked chicken with loaded baked potatoes

Rating: 5 out of 5 stars

Comments: You cannot go wrong with loaded baked potatoes. Okay, so maybe you can since potatoes are not fibro friendly and cheese is a dairy, but whatever!

Make it fibro-friendly: Don’t. Leave as is.

Rotisserie chicken with brown rice, black eyed peas, and green beans

Rating: 5 out of 5 stars

It was back to the basics with this recipe, but you know what? Less is more and keeping it simple makes it yummy!

Make it fibro-friendly: Use dairy free cheese, whole wheat bread, and no chips.

Comments: My husband loves, loves, loves burgers, so we have them often.

Comments: Half the kids like burgers, and the other half prefer hot dogs, so we alternated this week to satisfy both groups of kiddos.

Rating: 5 out of 5 stars

Comments: Tim calls me Buba, so this is my own recipe. I hope to make a post about this recipe soon. The recipes for chili do change each time I make it to get a variety.

Freezer-Friendly: Make a double batch and then freeze for later use.

Rating: 5 out of 5 stars

Comments: My kids are slowly coming around to having ground meat in their spaghetti, but it’s amazing with or without the meat. I’ll post a recipe for it soon.

Make it fibro-friendly: Use spaghetti squash or whole wheat noodles for the noodles.

Freezer-Friendly: Make a double batch of the sauce and then freeze for later use.

BBQ Chicken with sweet potato fries and green beans

Comments: My kids love the chicken! I’ll make a post about the BBQ sauce I use.

Comments: My husband and I liked this more than the kids. We had to double this recipe for our family of six.

Comments: I love, love, love kimchi, so I look for any excuse to eat it. Whenever we get a rotisserie chicken, it usually comes from our local grocer’s deli. I am looking for a good recipe, so that may be posted in the weeks ahead.

Make it fibro-friendly: Use brown rice.

Comments: This is a so-so meal. It’s not spectacular, but it’s easy and okay. I’ll make a post about this recipe.

Meatloaf with scalloped potatoes and green beans

Rating: 5 out of 5 stars

Comments: The meatloaf is moist and is loved by the entire family!

Make it fibro-friendly: Substitute the scalloped potatoes for roasted sweet potatoes.

Make it freezer friendly: Make a double batch and before cooking, freeze one of the raw loaves. Defrost and cook according to recipe.

BBQ Chicken with creamy garlic mashed cauliflower and steamed asparagus

Rating: 3 out of 5

Comments: The cauliflower dish does cool down so fast. In fact, by the time I got everyone’s food served and sat down to enjoy mine, it was cold. I recommend leaving it on the stove warmed.
